Cinnamon Pumpkin French Toast Bake

I originally posted this recipe on Instagram Stories and you guys went crazy for it! Honestly, I think it’s the most messages I’ve ever gotten and I promised I’d post the recipe in a blog post for easy access.

THE TIME HAS COME.

I really love recipes with minimal ingredients because 1) my attention span when it comes to cooking and baking is almost zero and 2) I hate buying crazy ingredients that I’ll end up having to throw away because I can’t use them in anything else. This recipe only has FIVE ingredients. That I can handle.

Ingredients:

  • 2 cans of cinnamon rolls

  • 1 cup of milk

  • 1 cup of pure pumpkin

  • 4 eggs

  • 2 teaspoons of pumpkin pie spice

Instructions:

Preheat oven to 375 degrees. Quarter each cinnamon roll and throw them In a casserole or baking dish. Set aside the frosting packets. In a separate bowl mix together the eggs, milk, pumpkin, and pumpkin pie spice. Pour the pumpkin mixture over the top of the cinnamon rolls and stir to make sure all the cinnamon rolls are evenly coated. Bake in the preheated oven for 35 - 45 minutes or until the center no longer jiggles. Once cooked thoroughly, remove from oven and immediately drizzle frosting packets over the top. Serve warm with maple syrup.

It comes together so quickly and easily and makes for a super delicious breakfast or brunch that everyone will want seconds of. I’m thinking I may make it for Thanksgiving morning too.
