Sausage + Kale Soup
Soup is kinda the perfect meal. It’s warm, comforting, and easy AF to throw together. This one is basically an Olive Garden Zuppa Toscana knockoff. I’ve been making this soup for YEARS both in the crockpot and on the stove and either way it’s to die for.
Ingredients:
1 lb ground Italian sausage
32 oz chicken broth
4 potatoes - peeled and chopped into bite sizes
Half of a bunch of kale torn into small pieces
1 tsp garlic powder
1 cup heavy cream
salt and pepper to taste
sourdough bread bowl (optional but highly encouraged)
Brown the sausage and set aside. You can do this in the same pot you plan to make the soup in, but I like to keep them separate so there isn’t excess grease in the broth. Add your chopped potatoes, garlic powder and broth to a large soup pot and bring to a boil. Let the potatoes cook in the broth for 15-20 minutes until tender but not mushy. Add in the sausage, kale, and heavy cream and stir. Serve in a warm bread bowl for maximum comfort food mode.
