Chicken and Cheesy Cauliflower Rice

I love carbs. Bread, rice, pasta…yum. But, I try to limit my consumption of such deliciousness. My general rule of thumb is a pretty strict low carb, low sugar diet throughout the week and 'I’m a little more lax on the weekends. I don’t find joy in total restriction and if you think I’m going to pass up cake at a party you’re TRIPPIN. Everything in moderation… I’m pretty sure that’s in the Constitution… or the Bible.

Below is a recipe my mom gave me and y’all…it’s good. Does the cauliflower actually taste like rice? No. Is it still pretty delish? YES. I’m one of those weirdos that can eat the same thing for several days in a row, so for the last couple weeks, I have made a big ole batch of this on Monday and had it for dinner for 3 nights. It reheats really well and comes together pretty quickly.

Ingredients:

  • 2 chicken breasts (cooked and shredded or cubed)

  • 1 10oz bag of frozen riced cauliflower

  • 1 tablespoon butter

  • 1/2 teaspoon garlic salt

  • 1/4 cup of half + half

  • 2 cups shredded cheese (I’ve done cheddar and mozzarella- both are great)

  • 4 tablespoons cream cheese

Melt butter in a pan over medium heat and then add cauliflower and garlic salt and cook for 7-10 minutes until tender. Add in chicken and stir. Turn heat down to low and add cream cheese, shredded cheese, half + half and stir until combined. Serve hot. I like to add some red pepper flakes for a little bit of spice. Enjoy!
