Perfect Egg Salad Croissants
Would you believe I was 28 years old before I learned how to properly hard boil an egg? It’s not a difficult task, certainly not rocket science but there is a method to doing it to avoid that weird green line or an over cooked yolk.
How to Perfectly Hard Boil an Egg
Put the eggs in a pot, making sure you don’t put more in than will cover the bottom (don’t stack ‘em up)
Add JUST enough water to cover the eggs. You don’t need a full pot of water.
Put the pot on the stove over high heat and wait for it to boil. I know it’s tedious but sit and watch it. It won’t take too long, I promise.
As soon as the water has come to a rolling boil, remove from heat and cover with a nice tight lid.
Let the eggs hang out in the water for 10-12 minutes and then remove them.
Let them cool down before you try to peel them and they should peel pretty easily.
Ta-Da! Perfect green-free hard boiled eggs.
Egg Salad Ingredients:
6 hard boiled eggs
5 tablespoons of mayo
1 tablespoon of mustard
1 teaspoon of balsamic vinegar
1/4 teaspoon of Slap Ya Mama Seasoning
In a medium sized bowl, smash up your hard boiled eggs with a fork. Add in mayo, mustard, balsamic vinegar, and Slap Ya Mama Seasoning and mix well. Serve on a croissant, bread, bagel, …whatever!
